Title : PROMOTION OF MULTI MILLET BASED HEALTH MIX AND EVALUATION OF ITS QUALITY ATTRIBUTES

Abstract :

Starvation is complete lack of nutrients it occurs when food is unavailable. Consumption of inadequate diet with less amounts of macro and micro nutrients causes mal nutrition which leads to lowered resistance power and poor cognitive and physical activity among the geriatrics. Health mix supplementation is hopefully expected to enhance nutritional status and support to lead a healthy life of older population. This study aimed to develop highly nutritious health mix using sprouted millets and cereals. Formulating nutrient dense health mix in the form of ready mix powder using the ingredients of ragi, pearl millet, wheat, roasted bengal gram, jaggery and rice for the preparation. The developed sample was standardised by preparing fifteen variations compare with commercially available health mix. All the variables were analysed for sensory attributes. The most accepted variation by the panel members was further subjected to nutrient analysis. Millets based products were highlights the medicinal and nutritional qualities of the developed food substances. The developed health mix contains high amount of energy, protein, calcium and iron which is suitable to geriatrics as recommended dietary need. Hence the developed health mix will ascertain adequate antioxidants and boost up immune properties.
